Ingredients:

  • 120g (4 ounces) dates
  • 50g (1.8 ounces) dried cranberries
  • 30g (1 ounce) oatmeal
  • 60g (2 ounces) almonds
  • 30g (1 ounce) peanuts
  • 20g (0.7 ounces) pumpkin seeds
  • 15g (0.5 ounces) sesame seeds
  • 15ml (0.5 fluid ounces) honey
  • 130g (4.6 ounces) dark chocolate without sugar
  • 20ml (0.7 fluid ounces) olive oil
  • 10g (0.4 ounces) pumpkin seeds for garnish

 

Directions:

  1. Soak dates and dried cranberries in cold water for 15 minutes to remove preservatives.
  2. Toast almonds and peanuts separately until fragrant.
  3. Blend almonds, drained dates, and cranberries to a coarse mix.
  4. Chop peanuts and add to the mixture.
  5. Combine oatmeal, pumpkin seeds, sesame seeds, and honey.
  6. Form into balls, place in molds, and refrigerate for 15 minutes.
  7. Melt dark chocolate and olive oil together, then pour over the balls.
  8. Garnish with pumpkin seeds.
