Ingredients:

  • 1 kg pork, cut into 1 cm thick pieces
  • Salt and pepper, to taste
  • 4 potatoes, sliced
  • 1 tsp salt
  • 0.5 tsp black ground pepper
  • 0.5 tsp paprika
  • 2 tbsp vegetable oil
  • 2 onions, cut into rings
  • Bacon slices (optional)
  • 2 tbsp soy sauce
  • 1 tbsp ketchup
  • 1 tsp honey
  • 1 tsp French mustard
  • 300g red cabbage, thinly sliced
  • 1 shallot, chopped
  • 1 cucumber, sliced
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil

 

Directions:

  • Prepare the Pork: Cover the pork slices with cling film and tenderize both sides using a kitchen mallet. Season both sides with salt and pepper.
  • Season the Potatoes: In a bowl, mix sliced potatoes with salt, black pepper, paprika, and vegetable oil.
  • Assemble the Skewers: Alternately thread potatoes, pork slices, onion rings, and bacon (if using) onto skewers.
  • Bake the Skewers: Preheat the oven to 200°C (392°F). Place damp parchment paper on top of foil on a baking sheet. Lay the skewers on the foil and seal tightly. Bake for 60 minutes.
  • Prepare the Sauce: Mix soy sauce, ketchup, honey, and French mustard in a bowl.
  • Glaze and Finish Baking: Remove the foil and parchment paper, brush the skewers with the sauce, and bake for another 15-20 minutes until golden brown.
  • Prepare the Red Cabbage Salad: In a bowl, mix red cabbage, salt, shallot, cucumber, and apple cider vinegar. Drizzle with olive oil and mix well.
  • Serve: Remove the skewers from the oven and serve with the red cabbage salad.
