  • 3 eggplants
  • 3 liters of water
  • Salt to taste
  • 4 eggs
  • Ground black pepper to taste
  • 1 tablespoon mayonnaise
  • 1 teaspoon mustard
  • 1 cup breadcrumbs
  • 4 tablespoons flour
  • 1 teaspoon smoked paprika
  • Oil for frying
