Ingredients:

  • 3 eggplants
  • 3 liters of water
  • Salt to taste
  • 4 eggs
  • Ground black pepper to taste
  • 1 tablespoon mayonnaise
  • 1 teaspoon mustard
  • 1 cup breadcrumbs
  • 4 tablespoons flour
  • 1 teaspoon smoked paprika
  • Oil for frying

 

Directions:

  1. Bring 3 liters of water to a boil in a large pot. Add salt to taste.
  2. Cut the eggplants into slices and add them to the boiling water. Cook for 1 minute, then remove from the water and let them cool slightly.
  3. In a bowl, beat the eggs with salt, ground pepper, mayonnaise, and mustard.
  4. In another bowl, mix the breadcrumbs, flour, and smoked paprika.
