Dough Ingredients:

  • 2 eggs
  • 5 tablespoons sugar (100g)
  • 8g vanilla sugar
  • 4 tablespoons oil (40 ml)
  • 3 tablespoons butter (60g), melted
  • 1 teaspoon baking powder (4g)
  • 360g flour

Cream Ingredients:

  • 1 egg
  • 3 tablespoons sugar (60g)
  • 3 tablespoons starch (50g)
  • Grated peel of half a lemon
  • 360 ml milk
  • 1 tablespoon butter (20g)
  • 1 tablespoon lemon juice

To Decorate:

  • 3-4 apples
  • Lemon juice
  • 1 tablespoon sugar
  • 1 tablespoon apricot jam or honey

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. For the dough, beat the eggs with sugar and vanilla sugar until fluffy. Add oil, melted butter, and baking powder, mix well. Gradually add flour and knead until smooth.
  3. Roll out the dough and line a 26 cm tart mold. Prick the dough with a fork and bake for 10 minutes.
  4. For the cream, beat the egg with sugar, starch, and lemon peel. Heat the milk, then gradually add to the egg mixture, stirring constantly. Cook over low heat until thickened. Remove from heat, add butter and lemon juice, and mix well.
  5. Peel and core the apples, cut into thin slices. Sprinkle with lemon juice and sugar.
