Ingredients:

  • 2 lbs chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked rice

 

Directions:

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides. Remove from pot and set aside.
  2. In the same pot, add onion and garlic. Sauté for 2-3 minutes until softened.
  3. Add carrots, bell pepper, zucchini, and cherry tomatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Return the chicken to the pot. Add chicken broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
