  • 2 cloves of garlic, minced
  • 2 stalks of green onion, chopped
  • 50g (1.76 oz) carrot, diced
  • 2 cups cooked rice, preferably day-old
  • 1/3 cup peas
  • 2 large eggs, beaten
  • 190g (6.7 oz) chicken, diced

Chicken Marinade:

  • 2 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp wine (e.g., Shaoxing wine)
  • 1/2 tsp sugar
  • 1/4 tsp baking soda
  • 2 tsp corn starch
  • 1/8 tsp white pepper powder
  • 2 tsp oil

For Cooking:

  • 4 tbsp oil
  • 1/4 tsp salt
  • 3 tsp dark soy sauce

  1. Prep Ingredients: Mince the garlic, chop the green onions, and dice the carrot. Set aside.
  2. Marinate Chicken: Mix the chicken with the marinade ingredients and let it sit for at least 15 minutes.
  3. Cook Eggs: Heat 1 tbsp of oil in a pan over medium heat. Pour in the beaten eggs and scramble until fully cooked. Remove from pan and set aside.
  4. Stir-Fry Chicken: In the same pan, add another tablespoon of oil and stir-fry the marinated chicken until it’s cooked through. Remove from pan and set aside.
  5. Stir-Fry Vegetables: Add another tablespoon of oil to the pan. Add the garlic, carrots, and peas, and stir-fry for a couple of minutes until the vegetables are tender.
  6. Combine Everything: Add the cooked rice to the pan with the vegetables. Stir-fry for a few minutes, breaking up any clumps of rice. Add the cooked chicken and eggs back into the pan.
  7. Season: Add the dark soy sauce and salt to the pan. Stir everything together until the rice is evenly coated with the sauce.
  8. Garnish: Stir in the chopped green onions and give everything a final mix.
  9. Serve: Serve the chicken fried rice hot, garnished with additional green onions if desired.
