  • 50g (1.76 oz) carrot, diced
  • 2 cups cooked rice, preferably day-old
  • 1/3 cup peas
  • 2 large eggs, beaten
  • 190g (6.7 oz) chicken, diced

Chicken Marinade:

  • 2 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp wine (e.g., Shaoxing wine)
  • 1/2 tsp sugar
  • 1/4 tsp baking soda
  • 2 tsp corn starch
  • 1/8 tsp white pepper powder
  • 2 tsp oil

For Cooking:

  • 4 tbsp oil
  • 1/4 tsp salt
  • 3 tsp dark soy sauce

 

Directions:

  1. Prep Ingredients: Mince the garlic, chop the green onions, and dice the carrot. Set aside.
  2. Marinate Chicken: Mix the chicken with the marinade ingredients and let it sit for at least 15 minutes.
