  • 1 bell pepper, chopped

  • 3 eggs
  • 1 glass of milk (approximately 240 ml)
  • 200 g of flour
  • 1 teaspoon baking powder
  • Cheese, grated (to taste)
  • Salt and pepper, to taste
  • Olive oil, for greasing

For the sauce:

  • Parsley, chopped
  • Plain yogurt
  • 1 tablespoon of mayonnaise
  • Salt and pepper, to taste

 

Directions:

  1. Prepare the Base: Preheat your oven to 180°C (356°F). In a large bowl, mix the grated potatoes, chopped spring onions, bell pepper, and carrot. In another bowl, beat the eggs and mix in the milk, flour, and baking powder until smooth. Combine the egg mixture with the potato mixture, add grated cheese, salt, and pepper to taste, and mix well.
