Ingredients:

  • For chicken marination:
    • 1 kg chicken
    • 1 tbsp ginger garlic paste
    • Salt to taste
    • 1 tbsp crushed black pepper
    • Juice of 1 lemon
  • For Sriracha-mayo:
    • 250 ml mayo (1 cup)
    • 3 tbsp Sriracha sauce
    • 4 tbsp ketchup
  • For pita dough:
    • 380 ml warm water (divided)
    • 1 tsp sugar
    • 7g yeast
    • 4 cups flour (approximately 500g)
    • 2 tsp salt
    • 3 tbsp oil
  • For salad:
    • Chopped red onion and cucumber

Directions:

  1. Marinate the chicken: Mix ginger garlic paste, salt, black pepper, and lemon juice in a bowl. Add chicken pieces, coat well, and marinate for at least 30 minutes.
  2. Prepare the Sriracha-mayo: Mix mayo, Sriracha sauce, and ketchup until well combined. Set aside.
  3. Make the pita dough: In a bowl, combine 250 ml warm water with sugar and yeast. Let sit until frothy, about 5-10 minutes. In another bowl, mix flour and salt. Add yeast mixture and oil, then gradually add remaining 130 ml warm water and knead into a smooth dough. Cover and let rise until doubled in size, about 1 hour.
  4. Cook the chicken: In a skillet over medium heat, cook the marinated chicken until fully cooked. Cool slightly.
  5. Assemble and bake: Preheat oven to 200°C (390°F). Divide dough into small balls, roll each into a circle, place chicken on each, fold edges to form a mini pita. Bake on a lined tray for 10-12 minutes until golden.
