Homemade Flaky Layered Egg Paratha Roll

Ingredients:

  • All-purpose flour (Maida) – 1/2 kg
  • Salt – 1 tsp
  • Warm water – 1 cup
  • Ghee or oil for frying
  • Eggs – 4
  • Salt – 1/2 tsp
  • Black pepper powder – 1 tsp
  • Red chili powder – 1/2 tsp (optional)
  • Green chilies – 1-2, finely chopped (optional)
  • Fresh coriander – 2-3 tbsp, chopped

 

Directions:

  1. In a large bowl, mix the all-purpose flour and 1 tsp salt. Gradually add warm water and knead to form a soft dough. Let it rest for 10 minutes.
  2. Divide the dough into 4 equal portions and roll each portion into a ball.
  3. Roll out one dough ball into a thin circle. Apply melted ghee over it, sprinkle some flour, and fold it like an accordion to create layers. Roll up the folded dough to form a spiral, then flatten it again. Repeat with all dough balls.
  4. In a separate bowl, whisk the eggs with 1/2 tsp salt, black pepper, red chili powder, green chilies, and coriander.
  5. Heat a tawa or skillet on low flame. Place a paratha on it and cook for about 1 minute on one side. Flip it, pour a portion of the egg mixture over the paratha, spreading it evenly. Drizzle some oil around the edges and cook until the egg is set and the paratha is golden and crispy on both sides. Repeat with remaining parathas and egg mixture.
  6. Serve hot with chutney, pickle, or yogurt.
