  • 25 g (0.9 oz) butter
  • 20 g (0.7 oz) garlic, minced
  • 1 whole chicken
  • 10 g (0.4 oz) salt
  • 7 g (0.2 oz) black pepper
  • 2 red onions, sliced
  • 5 g (0.2 oz) herbs of Provence
  • 5 g (0.2 oz) balsamic sauce

Sauce:

  • 10 g (0.4 oz) parsley, finely chopped
  • 40 ml (1.4 fl oz) soy sauce
  • 20 g (0.7 oz) mustard
  • 25 g (0.9 oz) tomato paste
  • 30 g (1.1 oz) honey
  • 8 g (0.3 oz) salt
  • 6 g (0.2 oz) sweet paprika

Directions:

  1. Prepare the Chicken: Season the entire chicken with salt and black pepper, ensuring it’s evenly coated.
  2. Cook the Chicken: In a large pan, heat the oil and butter over medium heat. Add the minced garlic and sauté until fragrant. Place the seasoned chicken in the pan and add the sliced red onions around it. Sprinkle the herbs of Provence over the chicken and drizzle with balsamic sauce. Cover the pan and cook over medium heat for 1 hour, turning the chicken occasionally to ensure even cooking.
  3. Prepare the Sauce: In a bowl, mix together the parsley, soy sauce, mustard, tomato paste, honey, salt, and sweet paprika until well combined.

Serve: Once the chicken is cooked and juicy, remove it from the pan and let it rest for a few minutes. Serve the chicken with the cooked onions and the prepared sauce on the side.
