Ingredients:

  • 1 teaspoon of salt (7 g)
  • 2 glasses of warm water (400 ml)
  • 5.5 cups of wheat flour (610 g)
  • 1 teaspoon of baking powder (6 g)
  • To lubricate: 160 g butter
  • Inner filling:
    • 7-8 tablespoons of olive oil
    • 1 onion, finely chopped
    • 1 teaspoon of salt (5 g)
    • 1 teaspoon of chili pepper (3 g)
    • 1 teaspoon of red pepper (4 g)
    • 2 potatoes, boiled and mashed
  • For the top:
    • Egg yolk

 

Directions:

  1. In a large mixing bowl, combine the salt, warm water, wheat flour, and baking powder. Mix well until a dough forms.
  2. Knead the dough for about 10 minutes, or until it becomes smooth and elastic. Cover and let it rest for 30 minutes.
  3. For the filling, heat the olive oil in a pan over medium heat. Add the chopped onion and cook until soft and translucent.
  4. Add the mashed potatoes, salt, chili pepper, and red pepper to the pan. Mix well and cook for another 5 minutes. Set aside to cool.
  5. Preheat your oven to 180°C (356°F).
  6. Roll out the dough on a floured surface to about 1/4 inch thickness. Spread the filling evenly over the dough, then roll up and shape as desired.
  7. Brush the top with egg yolk for a golden finish.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown.
