Ingredients:
- 1 teaspoon of salt (7 g)
- 2 glasses of warm water (400 ml)
- 5.5 cups of wheat flour (610 g)
- 1 teaspoon of baking powder (6 g)
- To lubricate: 160 g butter
- Inner filling:
- 7-8 tablespoons of olive oil
- 1 onion, finely chopped
- 1 teaspoon of salt (5 g)
- 1 teaspoon of chili pepper (3 g)
- 1 teaspoon of red pepper (4 g)
- 2 potatoes, boiled and mashed
- For the top:
- Egg yolk
Directions:
- In a large mixing bowl, combine the salt, warm water, wheat flour, and baking powder. Mix well until a dough forms.
- Knead the dough for about 10 minutes, or until it becomes smooth and elastic. Cover and let it rest for 30 minutes.
- For the filling, heat the olive oil in a pan over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the mashed potatoes, salt, chili pepper, and red pepper to the pan. Mix well and cook for another 5 minutes. Set aside to cool.
- Preheat your oven to 180°C (356°F).
- Roll out the dough on a floured surface to about 1/4 inch thickness. Spread the filling evenly over the dough, then roll up and shape as desired.
- Brush the top with egg yolk for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
