Ingredients:

  • 1 egg
  • 2.5 cups of water (500 ml)
  • 6 cups of flour (720 grams)
  • 1/3 teaspoon of salt
  • 200 grams of butter (for greasing the dough)
  • For the filling:
    • 400 grams of minced meat
    • 2 onions, finely chopped
    • 1 teaspoon of black pepper
    • 1 teaspoon of chili powder
    • Salt to taste
    • A handful of parsley, chopped
  • For the topping:
    • 1 egg yolk
    • 1 teaspoon of milk

 

Directions:

  1. In a large mixing bowl, whisk 1 egg. Add 2.5 cups of water and 1/3 teaspoon of salt, and mix well.
  2. Gradually add 6 cups of flour to the mixture, mixing continuously. Knead until you get a soft dough that doesn’t stick to your hands.
  3. Divide the dough into 4 equal parts, roll them into balls, and let them rest for 10 minutes, covered.
  4. Roll out each dough ball on a floured surface until large enough. Spread 50 grams of butter evenly over each.
  5. Layer another dough ball on top, spread butter, fold, and repeat for all. Refrigerate the folded dough for 30 minutes.
  6. Fry the minced meat until it absorbs its water. Add onions, and seasonings, and fry for 2-3 minutes. Add parsley, and let cool.
  7. Roll out the dough into a square, cut into four, place the filling, roll up, and place on a baking tray.
  8. Mix egg yolk and milk, brush over pastries, cut, and bake at 185°C until golden and crispy.
