Full Recipe:

Ingredients:

For the Vanilla Cream:

  • 250g milk
  • 20g butter
  • 3 egg yolks
  • 50g sugar
  • 20g corn flour
  • 1/2 teaspoon vanilla paste

For the Dough:

  • 200g all-purpose flour
  • 25g sugar
  • 3g instant yeast
  • 1 egg yolk
  • 100g warm milk
  • 20g butter

Directions:

  1. Make the Vanilla Cream: In a saucepan, heat the milk and butter until the butter is melted. In a separate bowl, whisk together the egg yolks, sugar, corn flour, and vanilla paste. Gradually add the hot milk to the egg mixture, whisking constantly to prevent curdling. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens. Remove from heat and let cool. Cover with plastic wrap to prevent a skin from forming.
  2. Prepare the Dough: In a mixing bowl, combine the all-purpose flour, sugar, and instant yeast. Add the egg yolk and warm milk. Mix to form a dough. Knead the dough until smooth, then add the butter and continue kneading until the dough is soft and elastic. Cover the dough with a damp cloth and let it rise in a warm place until doubled in size, about 1 hour.
  3. Assemble the Buns: Punch down the dough and divide it into equal portions. Roll each portion into a ball, then flatten it into a disc. Place a spoonful of vanilla cream in the center of each disc. Gather the edges of the dough around the filling and pinch to seal. Place the buns seam-side down on a baking sheet lined with parchment paper. Cover and let the buns rise for another 30 minutes.
  4. Cook the Buns (Without an Oven): Heat a large pan with a tight-fitting lid over low heat. Place the buns in the pan, making sure they’re not touching each other. Cover the pan and cook the buns for about 15-20 minutes or until they’re golden brown and cooked through. You may need to do this in batches depending on the size of your pan.

Serve: Let the buns cool slightly before serving. Enjoy your vanilla custard cream buns!
