  • 200 g (7 oz) mushrooms, finely chopped
  • 10 ml (0.34 fl oz) oil, plus more for frying
  • 5 g (0.18 oz) salt, plus extra for seasoning
  • 10 ml (0.34 fl oz) lemon juice
  • 100 g (3.5 oz) mozzarella, shredded
  • 2 boiled eggs, chopped
  • 30 g (1 oz) mayonnaise
  • 4 g (0.14 oz) black pepper
  • 30 g (1 oz) melted cheese
  • 3 eggs, beaten
  • 150 g (5.3 oz) flour

For the Salad:

  • 300 g (10.6 oz) boiled potatoes, diced
  • 100 g (3.5 oz) mayonnaise
  • 30 g (1 oz) mustard
  • 10 ml (0.34 fl oz) lemon juice
  • 1 red onion, finely chopped
  • 30 g (1 oz) celery, finely chopped
  • 30 g (1 oz) parsley, chopped
  • 30 g (1 oz) dark olives, sliced
