Full Recipe:

  • 450g ground beef
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 carrot, finely chopped
  • 3 sticks of celery, finely chopped
  • 120 ml dry red wine
  • A handful of fresh basil, chopped
  • 200g chopped tomatoes
  • 250g tagliatelle pasta
  • Grated Parmesan cheese
  • Salt and black pepper
  • Olive oil

  1. Cook the Vegetables: Heat a splash of olive oil in a large pan over medium heat. Add the onion, garlic, carrot, and celery. Cook for about 5 minutes or until the vegetables are softened.
  2. Brown the Meat: Increase the heat to high and add the ground beef to the pan. Cook, stirring and breaking up the meat, until it is browned and cooked through.
  3. Add Wine and Tomatoes: Pour in the red wine and let it simmer for a couple of minutes to reduce slightly. Then add the chopped tomatoes and basil. Season with salt and black pepper to taste.
  4. Simmer the Sauce: Reduce the heat to low and let the sauce simmer gently for about 1-2 hours, stirring occasionally. The longer it cooks, the more flavorful it will be.
  5. Cook the Pasta: Meanwhile, cook the tagliatelle pasta according to the package instructions in a large pot of salted boiling water until al dente.
  6. Serve: Drain the pasta and mix it with the Bolognese sauce. Serve hot, topped with grated Parmesan cheese and a sprinkle of fresh basil.
