  1. Preheat the oven to 180°C (350°F).
  2. Prepare the Pork: Season the pork tenderloin with salt, pepper, thyme, Italian herbs, and paprika. Heat some vegetable oil in a pan over medium heat. Sear the pork on all sides until browned. Remove from the pan and set aside.
  3. Cook the Vegetables: In the same pan, add the chopped onions, grated carrot, and sliced mushrooms. Cook until softened. Pour in the milk and bring to a simmer. Cook for a few minutes until the sauce thickens slightly. Season with salt and pepper to taste.
  4. Assemble the Dish: In a baking dish, layer the sliced potatoes at the bottom. Season with salt and pepper. Place the seared pork tenderloin on top of the potatoes. Pour the vegetable and milk mixture over the pork. Sprinkle the chopped bacon and grated cheese on top.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 1 hour. Remove the foil and bake for an additional 15-20 minutes or until the cheese is golden and bubbly.
  6. Serve: Let the pork tenderloin rest for a few minutes before slicing. Serve with the creamy potatoes and vegetables.
