Instructions
- Blend the ice cream layer ingredients in a high-speed blender until creamy. Pour the mixture into an 8×5 loaf pan lined with parchment paper and freeze for several hours.
- Mix the peanut butter caramel ingredients until smooth. Spread the caramel over the frozen ice cream layer. Top with peanuts and gently press them into the caramel. Freeze again for several hours.
- Slice the frozen layers into 8 bars. Melt the chocolate with coconut oil for a smooth consistency and coat each bar. Return the bars to the freezer to harden the chocolate.
- Before serving, let the bars sit out for a few minutes for a creamier texture. Store leftovers in the freezer.
