  • 1 pound smoked kielbasa, sliced
  • 3 pounds potatoes, peeled and diced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Directions:

  1. In a skillet over medium heat, add olive oil and brown the kielbasa slices until slightly crisp. Remove and set aside.
  2. In the same skillet, add the onion and garlic, sautéing until translucent.
  3. To the slow cooker, add the diced potatoes, browned kielbasa, sautéed onion and garlic, paprika, oregano, and chicken broth.
