  • 16.3 oz can Pillsbury Grands Southern Biscuits, halved horizontally
  • 1/4 cup Cinnamon Toast Crunch Cinnadust (or homemade mix of 1/2 cup granulated sugar + 1 1/2 tsp ground cinnamon)
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract or vanilla bean paste
  • 1 1/2 tsp pumpkin pie spice

Frosting:

  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350°F. Prepare a 9″x5″ or 8″x4″ loaf pan with butter or non-stick spray.
  2. In a small bowl, mix together pumpkin puree, egg, brown sugar, vanilla, and pumpkin pie spice until smooth.
  3. Split the biscuits horizontally by gently peeling them apart at the middle layer.
  4. Coat each biscuit layer with Cinnadust (or the homemade sugar-cinnamon mix).
  5. Tilt the loaf pan upward on one short side. Layer the biscuits and pumpkin mixture alternately, starting with a coated biscuit and adding a tablespoon of pumpkin mixture on top, repeating until the loaf is built.
  6. Bake for 40-45 minutes, or until the top is golden brown and the center is set. Cover with foil if the top browns too quickly.
  7. For the frosting, mix cream cheese, powdered sugar, maple syrup, vanilla, and pumpkin pie spice with a hand mixer until smooth and creamy.
  8. Once the loaf has slightly cooled, spread the frosting on top. Serve warm or room temperature.
