  • 3 1/2 pounds potatoes, peeled and diced
  • Water with a few pinches of salt added (for boiling potatoes)
  • 3 tablespoons butter
  • 1 medium onion, diced
  • 6 cups whole milk (or milk of choice)
  • 1 1/2 teaspoons salt (adjust to taste)
  • Ground black pepper to taste

Instructions

  1. Place diced potatoes in a large pot. Add enough salted water to cover the potatoes by about 1 inch. Bring to a boil and simmer until fork-tender but not falling apart (about 10–15 minutes). Drain, reserving 1 cup of the cooking water.
  2. In a Dutch oven or large soup pot, heat butter over medium heat. Add diced onions and sauté until soft and golden brown around the edges.
  3. Add the drained potatoes to the pot with the onions. Pour in milk and season with salt and pepper.
  4. Gently bring the soup to a simmer, stirring occasionally. Avoid boiling to prevent curdling. Simmer for 10 minutes.
  5. Mash about half of the potatoes with a potato masher, leaving the rest chunky. For a smoother consistency, use an immersion blender. Add reserved cooking water to adjust thickness if needed.
  6. Taste and adjust seasoning with salt and pepper. Serve piping hot with your favorite bread or crackers.
