Ingredients
- 3 1/2 pounds potatoes, peeled and diced
- Water with a few pinches of salt added (for boiling potatoes)
- 3 tablespoons butter
- 1 medium onion, diced
- 6 cups whole milk (or milk of choice)
- 1 1/2 teaspoons salt (adjust to taste)
- Ground black pepper to taste
Instructions
- Place diced potatoes in a large pot. Add enough salted water to cover the potatoes by about 1 inch. Bring to a boil and simmer until fork-tender but not falling apart (about 10–15 minutes). Drain, reserving 1 cup of the cooking water.
- In a Dutch oven or large soup pot, heat butter over medium heat. Add diced onions and sauté until soft and golden brown around the edges.
- Add the drained potatoes to the pot with the onions. Pour in milk and season with salt and pepper.
- Gently bring the soup to a simmer, stirring occasionally. Avoid boiling to prevent curdling. Simmer for 10 minutes.
- Mash about half of the potatoes with a potato masher, leaving the rest chunky. For a smoother consistency, use an immersion blender. Add reserved cooking water to adjust thickness if needed.
- Taste and adjust seasoning with salt and pepper. Serve piping hot with your favorite bread or crackers.
