Full Recipe:

For the Base:

  • 90g chocolate cookies, crushed
  • 40g unsalted butter, melted

For the Chocolate Cheesecake:

  • 300g cream cheese, softened
  • 275g liquid whipping cream
  • 150g dark chocolate, melted
  • 40g powdered sugar
  • 1/2 tsp vanilla extract

For the Ganache:

  • 100g dark chocolate
  • 75g whipping cream
  • 15g unsalted butter

  1. Prepare the Base: Mix the crushed chocolate cookies with the melted butter until well combined. Press the mixture into the bottom of a springform pan or a serving dish to form a crust. Chill in the refrigerator while you prepare the filling.
  2. Make the Cheesecake Filling: In a mixing bowl, beat the cream cheese until smooth. Add the liquid whipping cream, melted dark chocolate, powdered sugar, and vanilla extract. Mix until well combined and smooth. Pour the cheesecake filling over the prepared base and smooth the top with a spatula. Chill in the refrigerator for at least 4 hours, or until set.
  3. Prepare the Ganache: In a saucepan, heat the whipping cream until it just begins to simmer. Remove from heat and add the dark chocolate and unsalted butter. Let it sit for a minute, then stir until smooth and glossy. Let the ganache cool slightly, then pour it over the chilled cheesecake. Return the cheesecake to the refrigerator to chill until the ganache is set.
  4. Serve: Once the ganache is set, remove the cheesecake from the refrigerator. Slice and serve chilled.
