For the mince:

  • 500 g minced meat
  • 1 red pepper, chopped
  • 4 green peppers, chopped
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 2 medium-sized tomatoes, chopped
  • 30 ml of olive oil (about 3 tablespoons)
  • 1 teaspoon of tomato paste (25 g)
  • 1 glass of water (200 ml)
  • Spices: Black Pepper, Cumin, Thyme, Paprika, Salt

For the surface:

  • 150 g grated cheddar cheese
  • 1-2 sprigs of parsley, chopped

Directions:

  1. Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit).
  2. For the mashed potatoes: Peel and boil the potatoes until they are soft. Mash the potatoes and mix in the butter, grated cheddar cheese, and spices to taste. Set aside.
  3. For the mince: Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic and sauté until they are translucent. Add the minced meat and cook until it’s browned. Add the chopped red and green peppers, tomatoes, and tomato paste. Stir well. Pour in the glass of water and let it simmer until the vegetables are soft and the water has reduced. Season with spices to taste.
  4. Assembling the dish: In a baking dish, spread the mashed potatoes evenly at the bottom. Layer the cooked mince on top of the mashed potatoes. Sprinkle the grated cheddar cheese over the mince. Garnish with chopped parsley.
  5. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and golden brown.
