Ingredients:

  • 2 chicken breasts
  • 3 onions, sliced
  • 1 carrot, chopped
  • 1 bell pepper, chopped
  • A bunch of dill, finely chopped
  • 2-3 tablespoons canned corn
  • 1 glass of rice
  • 2 glasses of water
  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 100-150 ml water
  • Salt, black pepper, paprika to taste

 

Directions:

  1. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add sliced onions, carrot, and bell pepper. Season with salt, pepper, and paprika. Cook until the vegetables are soft.
  2. In a separate pan, heat the remaining oil and fry the chicken breasts seasoned with salt, pepper, and paprika until golden.
  3. Add 1 tablespoon of tomato paste and 100-150 ml of water to the chicken. Cover and simmer over low heat for 10-15 minutes until the chicken is cooked through.
  4. In another pan, fry 1 chopped onion for 1-2 minutes. Add rice and fry briefly. Pour in 2 glasses of water and season with salt. Cook until the rice is done.
  5. Mix the cooked rice with the sautéed vegetables, add the canned corn and dill. Combine well.
  6. Serve the chicken breasts on a bed of the vegetable rice.
