- 2 chicken breasts
- 3 onions, sliced
- 1 carrot, chopped
- 1 bell pepper, chopped
- A bunch of dill, finely chopped
- 2-3 tablespoons canned corn
- 1 glass of rice
- 2 glasses of water
- 2 tablespoons vegetable oil
- 1 tablespoon tomato paste
- 100-150 ml water
- Salt, black pepper, paprika to taste
Directions:
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add sliced onions, carrot, and bell pepper. Season with salt, pepper, and paprika. Cook until the vegetables are soft.
- In a separate pan, heat the remaining oil and fry the chicken breasts seasoned with salt, pepper, and paprika until golden.
- Add 1 tablespoon of tomato paste and 100-150 ml of water to the chicken. Cover and simmer over low heat for 10-15 minutes until the chicken is cooked through.
- In another pan, fry 1 chopped onion for 1-2 minutes. Add rice and fry briefly. Pour in 2 glasses of water and season with salt. Cook until the rice is done.
- Mix the cooked rice with the sautéed vegetables, add the canned corn and dill. Combine well.
