  • 2 ribeye steaks (1214 oz each)
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Steaks
    Rest the steaks at room temperature for 30-60 minutes. Pat dry with a paper towel.
  2. Preheat Your Grill
    Clean and oil grill grates. Preheat to 450-500°F for direct heat.
  3. Season the Steaks
    Brush both sides of the steaks with olive oil. Evenly sprinkle with salt, pepper, ground coriander, garlic powder, onion powder, and cayenne pepper.
  4. Sear the Steaks
    Place steaks on the grill over direct heat. Sear the first side for 2-4 minutes until a golden crust forms. Flip and sear the other side for 2-4 minutes.
  5. Check the Temperature
    Use a meat thermometer: 

    • Rare: 125°F
    • Medium Rare: 135°F
    • Medium: 145°F
    • Medium Well: 155°F
    • Well Done: 160°F
  6. Finish Grilling
    Move steaks to indirect heat if needed. Grill 4-6 minutes per side until desired doneness.
  7. Rest the Steaks
    Remove from the grill and let rest for 5 minutes to redistribute juices.
  8. Serve
    Slice against the grain and enjoy immediately.
