Ingredients
- 2 ribeye steaks (12–14 oz each)
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 1 teaspoon ground coriander
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
Instructions
- Prepare the Steaks
Rest the steaks at room temperature for 30-60 minutes. Pat dry with a paper towel. - Preheat Your Grill
Clean and oil grill grates. Preheat to 450-500°F for direct heat. - Season the Steaks
Brush both sides of the steaks with olive oil. Evenly sprinkle with salt, pepper, ground coriander, garlic powder, onion powder, and cayenne pepper. - Sear the Steaks
Place steaks on the grill over direct heat. Sear the first side for 2-4 minutes until a golden crust forms. Flip and sear the other side for 2-4 minutes. - Check the Temperature
Use a meat thermometer:- Rare: 125°F
- Medium Rare: 135°F
- Medium: 145°F
- Medium Well: 155°F
- Well Done: 160°F
- Finish Grilling
Move steaks to indirect heat if needed. Grill 4-6 minutes per side until desired doneness. - Rest the Steaks
Remove from the grill and let rest for 5 minutes to redistribute juices. - Serve
Slice against the grain and enjoy immediately.
