  • 4 large eggs (yolks and whites separated)
  • 2 tablespoons butter
  • 3 green onions (whites and greens separated)
  • 1.5 tablespoons garlic, minced
  • 2.5 tablespoons soy sauce

Instructions

  1. Prepare the Steak: Cut the steak into bite-sized cubes. Marinate with soy sauce, oyster sauce, black pepper, baking soda, and baking powder. Set aside while preparing other ingredients.
  2. Coat the Rice: Mix the egg yolks into the cold, cooked rice, ensuring every grain is evenly coated.
  3. Cook the Steak: Heat oil in a pan over medium-high heat. Once hot, add the steak. Let it cook undisturbed for about 30 seconds, then stir-fry for 3-4 minutes until browned on all sides. Remove from the pan and set aside.
  4. Start the Fried Rice: In the same pan, sauté the white parts of the green onions and garlic for 30 seconds.
  5. Add the Eggs: Push the aromatics to one side of the pan. Pour in the beaten egg whites, allowing them to set for 20 seconds before scrambling.
  6. Combine Ingredients: Add the rice and soy sauce to the pan, stirring on high heat for 2-3 minutes. Add the butter, green onion tops, and cooked steak. Stir-fry for 1-2 minutes until everything is well-mixed and heated through.
