Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz fettuccine pasta
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
- Red pepper flakes, optional for extra heat
Instructions
- Cook the fettuccine pasta according to package instructions. Drain, reserving 1/2 cup of pasta water. Set aside.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- In the same skillet, melt the remaining butter. Add garlic and sauté for 1-2 minutes until fragrant.
- Pour in white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to simmer and reduce by half, about 3-4 minutes.
- Stir in heavy cream and bring to a gentle simmer. Let the sauce thicken slightly, about 3 minutes.
- Add Parmesan cheese and stir until the sauce is smooth. Season with lemon juice, salt, pepper, and red pepper flakes, if using.
- Add the cooked shrimp and pasta to the skillet. Toss everything together, adding reserved pasta water if the sauce needs thinning.
- Garnish with fresh parsley before serving.
