  • 1 lb large shrimp, peeled and deveined
  • 8 oz fettuccine pasta
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Red pepper flakes, optional for extra heat

Instructions

  1. Cook the fettuccine pasta according to package instructions. Drain, reserving 1/2 cup of pasta water. Set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  3. In the same skillet, melt the remaining butter. Add garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to simmer and reduce by half, about 3-4 minutes.
  5. Stir in heavy cream and bring to a gentle simmer. Let the sauce thicken slightly, about 3 minutes.
  6. Add Parmesan cheese and stir until the sauce is smooth. Season with lemon juice, salt, pepper, and red pepper flakes, if using.
  7. Add the cooked shrimp and pasta to the skillet. Toss everything together, adding reserved pasta water if the sauce needs thinning.
  8. Garnish with fresh parsley before serving.
