  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/4 cup cinnamon sugar (for rolling)
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream the butter and granulated sugar together until light and fluffy, about 3 minutes.
  4. Beat in the egg, eggnog, and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll dough into 1-inch balls and coat them in cinnamon sugar.
  7. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Use your thumb or the back of a spoon to make an indent in the center of each cookie.
  9. Bake for 10-12 minutes, until the edges are lightly golden.
  10. Remove from the oven and press a few white chocolate chips (if using) into the center of each cookie while still warm.
  11. Let the cookies cool on a wire rack before serving.
