- 1 chicken breast
- 1 medium onion
- 1 bell pepper
- 6 tortillas
- 2 cups cheese
- 1 tbsp red chili powder
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper powder
- 1 tsp cumin powder
- Directions:
- Cook the chicken breast in a pan until fully cooked. Shred the chicken using two forks and set aside.
- Dice the onion and bell pepper.
- In the same pan, sauté the onion and bell pepper until softened.
- Add the shredded chicken back to the pan along with the red chili powder, garlic powder, salt, black pepper powder, and cumin powder. Stir to combine and cook for another minute.
- Place a tortilla on a flat surface. Spoon some of the chicken mixture onto half of the tortilla.
- Sprinkle cheese over the chicken mixture.
- Fold the tortilla in half to cover the filling.
- Repeat with the remaining tortillas and filling.
- Heat a pan over medium heat. Place a filled tortilla in the pan and cook until golden brown on both sides and the cheese is melted.
