  • 2 young zucchinis
  • 100g rice
  • 200ml water
  • 2 eggs
  • 1 tablespoon flour
  • 1 clove of garlic, minced
  • Your favorite spices, salt, and pepper to taste
  • Olive oil for frying


  1. Grate the zucchinis and use a kitchen towel or sieve to squeeze out the excess water.
  2. Cook rice with 200ml water until the water is absorbed and rice is cooked. Let cool.
  3. In a bowl, mix grated zucchini, cooked rice, eggs, flour, minced garlic, spices, salt, and pepper to form a batter.
  4. Heat olive oil in a frying pan over medium heat. Spoon the mixture into the pan, forming small fritters.
