Ingredients

  • 4 boneless chicken thighs
  • 150g nduja sausage, peeled
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add the onions and garlic and sauté for about 2 minutes until softened.
  3. Add the nduja sausage to the skillet and cook, breaking it apart with a spoon, for another 3-4 minutes.
  4. Stir in the cream, chicken broth, and parmesan cheese. Bring to a simmer, then season with thyme, parsley, salt, and pepper.
  5. Place the chicken thighs in a baking dish and pour the nduja sauce over the top.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly and golden.
  7. Garnish with fresh parsley before serving.
