  • 2 tablespoons oil
  • 250 g ground beef
  • 2 tablespoons soy sauce
  • 1 teaspoon grated ginger
  • 2 teaspoons white pepper powder (adjust to taste)
  • 2 tablespoons corn flour (or corn starch)
  • 2 tablespoons spring onion, chopped
  • 120 g vermicelli noodles (or your choice of noodles)
  • 2 tablespoons Chinese dark vinegar (optional)
  • 2 tablespoons Chinese chili oil (optional)

Instructions

  1. Heat oil in a saucepan over medium heat. Add ground beef and break it apart while cooking until slightly browned.
  2. Stir in grated ginger and soy sauce, cooking for 10-15 seconds to caramelize.
  3. Add 1 cup of water and white pepper powder, cover, and simmer for 10 minutes. Add more water if needed.
  4. Meanwhile, cook noodles in boiling salted water according to package instructions until al dente. Drain and set aside.
  5. Mix corn flour with 1/2 cup water and add it to the beef mixture. Stir until the sauce thickens evenly.
  6. Toss the cooked noodles into the beef sauce, ensuring they are well coated.
  7. Garnish with chopped spring onions and serve. Add dark vinegar and chili oil as desired.
